ARTISAN EATS HAS BEEN A REALITY IN THE MAKING FOR MANY YEARS. AS FAR BACK AS I CAN REMEMBER, MY HAPPY PLACE HAS BEEN THE KITCHEN. WHETHER IT WAS MY GRANDPAS HOUSE OR MOMS COOKBOOKS, I COULD BE FOUND TEACHING MYSELF AND LISTENING CLOSE TO OTHERS, ON THE INS AND OUTS AND WHYS OF FOOD AND THE PROCESS IN WHICH ONE CREATES. CARRYING SOME OF THOSE TRIDE AND TRUE RECIPES WITH ME, THESE DAYS, I HAVE LEARNED A TWIST ON THE OLD. WITH THE IDEA OF MAKING IT MORE ACCESSIBLE TO LOCALITY AND CREATIVITY. PEOPLE ASK ME TO DESCRIBE MY FOOD. I SAY, “IT’S AN OLDENEW WAY OF COOKING”

I BEGAN "PROFESSIONALLY" COOKING IN THE TINIEST EATERY ON A LAKE IN NEW HAMPSHIRE. I WAS 12.  I WASN'T ACTUALLY COOKING, I WAS PREPPING SATURDAY AND SUNDAY BREAKFAST, HANGING OUT WITH MY COUSINS AND THEIR GRANDPARENTS WHO OWNED THIS TINY LITTLE MARINA. I LEARNED A LOT OF PREPARING FOOD FOR QUANTITIES, AS THE LOCALS WOULD SAIL IN AND OUT ALL-DAY LONG. LOOKING FOR PANCAKES AND EGGS, COFFEE AND CHATTER.

I MOVED ON TO COOK PIZZA AND MAKE SANDWICHES FOR GRAPPELLIS PIZZA. I WAS THERE FOR ALL OF MY HIGHSCHOOL CAREER. BY THE END I THOUGHT I KNEW EVERYTHING ABOUT WHAT THERE WAS TO MAKE AND PREPARE FOOD. I LEARNED HOW TO MAKE PESTO. AFTER THINKING THAT I USED THE STEMS AND TRIED TO THROW AWAY ALL THE LEAVES. I WAS WRONG, MY BOSS WAS SURPRISED I HAD NEVER MADE IT BEFORE, AND I THINK SERIOUSLY CONTEMPLIATED FIRING ME. I LAUGH NOW, BECAUSE PESTO IS THE EASIEST CREATION AND CAN BE SO FORGIVING.

I MOVED TO PORTLAND, MAINE IN 2008. I MET MY THEN NEIGHBOR AND SHE SPOKE OF THIS PLACE CALLED VAUGHAN STREET. I WENT AND GOT SOME LUNCH, HAD A CONVERSATION WITH THE OWNER AND THEN TOLD HIM I’D LIKE TO WORK THERE. HERE, THIS IS THE PLACE THAT REALLY BRIGHTENED MY FOOD RAINBOW. THEY WERE CREATING ALL SORTS OF FOREIGN THINGS I HAD NEVER HEARD OF. PASTRAMI AND MANGO CHUTNEY SANDWICHES. LAYERS UPON LAYERS OF CREATIVITY AND HEART WENT INTO EVERY ITEM THAT LEFT THAT TINY PLACE. JEFFREY MY BOSS, WOULD ADD EGGS TO EVERYTHING, WHILE ENCOURGING US TO CREATE WHATEVER WE WANTED.  I SPENT MONTHS LEARNING THE MENU AND FOOD COMBINATIONS. COPIOUS AMOUNTS OF KNOWLEDGE WAS GAINED, I STILL GO TO THESE MENUS FOR INSPIRATION TODAY.

I THEN MOVED TO VERMONT. THERE ARE FARMERS AND A LOVE OF LOCAL THINGS HERE. I WORKED SOME TIME AS AN ASSISTANT PASTRY CHEF TO BETHANY. SHE GIFTED ME WITH ALL SORTS OF FOOD KNOWLEDGE. FROM TRULY DEFINING UMAMI TO ICE CREAM, CRÈME BRULEES TO PROFESSIONAL PLATES. I GAINED IMMENSE AMOUNTS OF KNOWLEDGE ON HOW TO BE A PROFESSIONAL AND USE MY KNOWLEDGE TO CREATE BEAUTIFUL AND DELICIOUS FOOD. I WAS STRONGLY LACKING THE BEAUTY BEFORE.

I THEN MOVED ON TO RUNNING AN OUTDOOR WOOD-FIRED PIZZA OVEN. IT IS LOCATED HERE IN ARTISANS PARK. A WHOLE NEW WAY OF COOKING WAS BROUGHT TO LIGHT. LEARNING HOW TO MANIPULATE THE WOOD FIRE AND MAKE IT DO WHAT I WANT, VERSUS A REGULATED TEMPERATURE WAS A LEARNING CURVE TO SAY THE LEAST. I WAS ALSO LEARNING A NEW LOVE OF LOCAL CHEESE AND THE AGE OLD PROCESS BEHIND IT. THIS PLACE ALLOWED ME TO CONTINUE MY FOOD KNOWLEDGE AND BE CREATIVE.

I SPENT THE LAST YEAR BACK INSIDE. I BOUGHT A QUICHE BUSINESS AND HELPED JAKES QUECHEE MARKET RELAUNCH THEIR CAFÉ. I HAVE LEARNED AN IMMENSE AMOUNT OF WHAT IT MEANS TO MANAGE PEOPLE AND FOOD. WE RUN A GREAT CREW AND THINGS ARE BUSIER THAN THEY EVER HAVE BEEN. SOMEWHERE ALONG THE LINE, I DECIDED I WANTED TO FULFILL MY DREAM, AND FINALLY OPEN A PLACE TO CALL MY OWN. I HAVE HAD TREMENDOUS AMOUNTS OF HELP FROM MY COMMUNITY, THE PEOPLE WHO I HAVE MET ALONG THE WAY AND STRANGERS WHOM ARE NOW FRIENDS, TO HELP ME MAKE MY DREAM INTO A REALITY.

ARTISAN EATS IS A COMBINATION OF MY PERSONAL LOVE FOR FOOD, THE COMMUNITY IN WHICH WE LIVE AND THE KNOWLEDGE THAT GOOD FOOD CAN REALLY MAKE ANY EXPERIENCE. WE ARE UP FOR ANY CHALLENGE. WHETHER IT IS CATERING YOUR BACK-YARD BARBECUE, HELPING YOU PLAN APPETIZERS FOR YOUR WEDDING OR SIMPLY PACKING A HEALTHY PICNIC FOR A SOLO ADVENTURE, WE WANT TO WORK WITH YOU.

WE WORK SIDE BY SIDE WITH LOCAL FARMERS AND VENDORS, TRYING TO KEEP AS MANY THINGS AS POSSIBLE WITHIN THIS BEAUTIFUL COMMUNITY WE LIVE AND THRIVE IN. OUR MENUS CHANGE WITH THE SEASONS AND CREATIVE THOUGHTS THAT FLOW. SOMETHINGS WE CANNOT ACCESS YEAR ROUND, BUT WE PROMISE, THAT WHEN WE ROAM AWAY FROM NEW ENGLAND SOURCED ITEMS, WE WILL STILL BRING YOU THE BEST QUALITY WE CAN.

WE APPRECIATE ANY TIME YOU AS A CONSUMER PUT INTO WORKING WITH US, SO THANK YOU FOR READING ABOUT MY EXPERIENCE, THE ONLY OTHER THING I ASK IS, CHECK OUT OUR MENU PAGE AND LET THE FOODIE IN YOU GET AS EXCITED AS WE DO!
